Lately I’ve been looking to create more recipes from my crock-pot, a tool every mother should have in her cupboard! Seriously, they save so much time and effort from preparing a meal that you could otherwise be spending with your family!
Sundays are usually crazy, long and busy days with my husband working at our Church. Though we love every part of it the last thing I feel like doing after coming home is making a meal. For that reason Sundays have become our crock-pot meal days!
It’s so nice to come home to the smell of a hot and ready meal! It’s also great that it creates enough food for leftovers!
Today I’m sharing a recipe that’s Mexican inspired!
My husband loves tacos and pretty much any Mexican food. I was looking for a new recipe I could make that held all the same flavor as his favorites but was something different than what were used to making.
These taco bowls are perfect if you have a craving for Mexican food! They are so easy to make and require very little effort.
Simply allow the chicken to cook in the crock pot while you’re out running errands or chasing the kids around and cleaning the house. Once chicken is almost complete all you need to do is cook up some rice and prepare some vegetables, make a simple sauce, put it all together and you’ve got one tasty Mexican dinner ready by the time dad gets home!
Our family absolutely loves this tasty recipe, and Mom loves how easy and little work it is to make! Try it out for yourself!
Crock – Pot Shredded Chicken Taco Bowls
4 – 6 Chicken Breasts
Whole Kernel Corn
Whole Grain Brown Rice
Defrost chicken breasts and place in crock-pot.
In a small bowl mix together chili powder, garlic powder, onion salt, paprika, salt, pepper.
Sprinkle half of the seasoning over chicken, flip over and sprinkle remaining amount.
Mix minced garlic, ketchup and water and add to chicken. Set crock pot on High for 4 hours.
Flip chicken half way through.
Shred chicken finely with a fork.
Cook rice according to box instructions.
In medium frying pan cook corn and beans until lightly browned.
In a separate bowl mix mayo, paprika and sriracha.
Add rice, meat, vegetables and sauce together and mix well. Serve immediately.
