Honey Mustard BBQ Chicken and Vegetable SaladHello Beautiful Readers! Pray everyone is doing well today!

This past weekend the weather here in Calgary finally decided to warm up! We were able to spend some time outdoors and even do a little spring clean up in the yard! The warm weather also had me inspired to start-up our barbecue!

I didn’t have a recipe in mind but I knew I had a craving for greens and some good grilled chicken! I think I surprised myself a little, with just a few simple ingredients I put together this easy and incredibly tasty salad that I know I’ll be making a lot more this spring! I couldn’t keep this recipe to myself, I was so excited to share with all of you!

This recipe includes fresh spinach and arugula, seasoned and roasted vegetables, grilled to perfection chicken and topped with a sweet honey mustard dressing. This will easily become one of your most delicious go to healthy meals!

Ingredients:

4 Chicken breasts

Spinach

Arugula

Sweet Potato

Zucchini

Red Bell Pepper

Yellow Bell Pepper

Orange Bell Pepper

Whole Kernel Corn

Your favorite chicken sauce

Montreal Steak seasoning

No salt seasoning

Dijon Mustard

Honey

Cider Vinegar

Sea Salt

Pepper

Garlic powder

Vegetable Oil

Preparing The Chicken.

If frozen defrost chicken completely. Rub chicken sauce on both sides of breast and sprinkle Montreal steak seasoning. Set aside

Preparing Vegetables:

In a medium size bowl mix together sweet potatoes,  zucchini, bell peppers and corn. Drizzle vegetable oil, salt, pepper, garlic and no salt seasoning. mix together till well coated. Lay a sheet of tinfoil out flat and place vegetables evenly. Fold in sides to make a little package. Add another piece of tinfoil if needed.

Cooking:

Grill Chicken and vegetables on medium heat. Flipping/ mixing every 5-10 minutes

Preparing Salad:

Mix together spinach and arugula, wash and pat dry with paper towel. Distribute greens evenly over 4 plates.

Preparing Salad Dressing:

In a small bowl or salad dressing container add all ingredients together and mix well. Store in fridge until ready.

Final Prep:

Once vegetables are cooked, distribute evenly over plates. When the chicken is finished cut each breast into strips and place over vegetables. Drizzle desired dressing amount over top.
